AI in the restaurant: from shift schedules to hands-free HACCP
How AI automates a restaurant’s daily grind — shift scheduling, traffic forecasting, food-safety compliance — and what that means for operating cost.
A restaurant is one of the most demanding environments for software: everything happens at once, with wet hands, at peak hour. Perhaps that’s why most hospitality “solutions” ended up being cash registers with a screen. The new generation of systems does something different: it observes how the restaurant runs and takes the routine off people’s hands.

The schedule that writes itself
The weekly rota is a small mathematical problem solved every Sunday night with frayed nerves: availability, leave, cost, expected traffic. A system with embedded AI solves it differently — it looks at sales history by day and hour, the weather, public holidays, and proposes a schedule that covers expected traffic without wasted hours. The manager doesn’t start from a blank page; they start from a good draft and correct it.
The same history feeds supply ordering: if Friday reliably brings 40% more traffic, the system knows before the human remembers.
HACCP that needs no pen — and no supervision
We’ve written in detail about digital HACCP: sensors log temperatures 24/7 and the records build themselves. AI adds the next level — it doesn’t just record, it understands. A temperature climbing slowly but steadily isn’t a violation yet; it is, however, the symptom of a fridge that will die over the weekend. The system alerts you while the fault costs a service call, not a fridge full of stock.

Answers that don’t need a report
Restaurant management lives on questions: what did labour cost us yesterday as a share of revenue? Which dishes are dragging? How many voids did we have, and why? In classic systems the answers require Excel exports and half an hour. In a system with AI, you ask the way you’d ask a colleague — “how did we do yesterday versus last Thursday?” — and the answer comes back in seconds, with numbers.
That is the philosophy behind Makker, our own restaurant management system: time tracking, orders and HACCP in one platform, with AI working in the background — suggesting schedules, catching drifts early, answering in plain language. The future of hospitality tooling won’t add screens; it will remove worries.
Where a restaurant should start
Not with everything at once. The order we see working: time tracking and shifts first (immediate, measurable effect on labour cost), then digital HACCP (paper leaves, safety arrives), and finally forecasting and reporting once history has accumulated. Each step pays for itself — and each next step stands on the data of the previous one.
