# HACCP without paper: how IoT automates food-safety logging

Every professional kitchen has a binder of temperature sheets filled in by hand — often hastily, sometimes after the fact, always with effort. HACCP requires the records; it does not require a pen.

## What HACCP actually requires

A HACCP system calls for documented monitoring of critical control points — most commonly fridge and freezer temperatures: regular measurements, an archive, and documented corrective action when something drifts. Nowhere is the medium specified. Digital logging is fully acceptable — and in practice more trustworthy, because it can’t be forgotten or "reconstructed" later.

## How the automated setup works

The architecture is simpler than it sounds:

1. **Sensors** in each fridge and freezer measure temperature at regular intervals — every minute if needed.
2. **A local hub** collects readings and sends them to the cloud. During an internet outage it buffers locally and syncs afterwards.
3. **The platform** keeps the history, produces inspection-ready records, and — most critically — **alerts immediately** when a temperature leaves its range: SMS or push the moment it happens, not next shift.

## What the kitchen gains

- **Staff time:** no handwritten logs, no thermometer rounds.
- **Stock protection:** a fridge failing on Saturday night is discovered in minutes, not on Monday — with a full cold room’s worth of stock at stake.
- **Inspection readiness:** a complete, tamper-proof history in one click, instead of a binder with gaps.

## The cost, honestly

An installation of 5–10 measurement points with alerts is today an investment of a few hundred euros in hardware, plus a platform subscription. It typically pays for itself with the first incident it catches — one failed cold room full of stock costs more than the entire system.
